White Chocolate Chip Oatmeal Cookies

 White Chocolate Chip Oatmeal Cookies

 

If you are a regular reader, you will know that I prefer cooking over baking.  If you’re just happening upon this today, then you will soon learn that about me.  However, this past week, my daughter had been asking me to get some cookies when I went to the grocery store.  I thought to myself, okay that is too easy and I want to make them so I know what is going in them.  I wanted them to be a little on the healthier side and have some sort of fiber for my daughter’s benefit – hence the oatmeal.  (Are you laughing now because they are cookies? It’s okay. Me too.)

I looked through my baking supplies and had everything but your traditional chocolate chips.  I did have white chocolate chips and even though I find them to be a tad sweeter than regular chocolate, I thought why not make white chocolate chip oatmeal cookies?!  These are very simple and perfect for anytime of year.  They came out perfectly crisp on the outside and soft & chewy on the inside.  You can enjoy these with a glass of milk or cup of coffee like I did.

Ingredients:

  • 1 cup butter {2 sticks equals 1 cup}
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups rolled oats
  • 2 cups white chocolate chips  (I used 1 1/2 because I find the white chocolate chips to be a little too sweet for my liking. You can use 2 cups if you like.)

Instructions:

  1. Preheat Oven to 350 degrees.
  2. Lightly grease cookie sheets.
  3. In a medium bowl, cream together the butter, brown sugar and white sugar until smooth.
  4. Stir in the egg and vanilla.
  5. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture.
  6. Finally, stir in the rolled oats and white chocolate chips.
  7. Drop by tablespoons onto the prepared cookie sheets.
  8. Bake for 10 to 12 minutes in the preheated oven.
  9. Remove from baking sheets to cool on wire racks.
  10. ENJOY!!
