Slow Cooker Potato Soup

My slow cooker saves me so much time and headache!  I have been using it almost daily this month!  Some are traditional recipes and some are new for me.  One that I really love and is a favorite of my husband’s as well, is slow cooker potato soup.  It is a delicious comfort food and perfect for any fall or winter day.  I especially love it because you can add or omit just about any veggies you want!  There’s no wrong or right with what type of cheese you use either. Win-win!

Tip: It is easy to throw in extra potatoes, etc if you need to make a slightly bigger batch.  Just kind of eyeball that part. 😉  And remember, leftovers are not a bad thing! 

Ingredients:

  • 6 medium sized potatoes, diced {You can peel them if you want, but sometimes I like to leave the skin on.  It is just as delicious.}
  • Chopped onion {1/2 to 1 cup, depending on how much onion you like}
  • 4 cups of milk, 1% or 2%
  • 1 1/2 cups chopped carrots
  • 2 cups shredded cheddar cheese {or any flavor you like!}
  • 1 stick salted butter
  • 8 oz sour cream
  • 4 slices of crispy bacon crumbled up
  • salt & pepper, to taste

Instructions:

  1. Add your potatoes, carrots, butter, milk and onion into the slow cooker.
  2. Cook on low for approximately 6 hours.
  3. After cooking it, add the sour cream and shredded cheese directly into slow cooker.
  4. Stir together and let it combine {20-30 minutes}
  5. Scoop into your bowl, add some bacon crumbles on top and ENJOY!!

    This sounds awesome! Tomorrow it is supposed to be around 40 in the morning, with a high in the mid 50s – this will be great to come home to! How do you think this would work with sweet potatoes? I just picked up a bunch at the farmer’s market…

    • Thanks Calien! It is so delicious! It sounds like it would be very good made with sweet potatoes. I don’t know if they get softer than your ‘everyday’ potatoes when cooked in the slow cooker, but it would be worth a try. Wish I was more help – I just have no experience cooking with sweet potatoes!
