Simple Butternut Squash Recipe

There are many ways to prepare all varieties of squash, but today I am focusing on a simple butternut squash recipe.  With fall here, I am all over the pumpkin, apple and squash I can get my hands on!  This is so easy that you will find yourself making it each time it’s fall.  You can even prepare extra and freeze them for a dinner later on.  Perhaps when squash is out of season, but you find yourself craving it.

Simple Butternut Squash Recipe
  • 2 medium butternut squash, halved lengthwise and seeded
  • 4 teaspoons butter
  • 4 teaspoons brown sugar
  • Salt and pepper
  1. Preheat oven to 400 degrees F.
  2. Cut squash in half length wise.
  3. Put halves on a large baking sheet flesh side up.
  4. Place 1 teaspoon butter in the middle of each squash.
  5. Sprinkle brown sugar, salt and black pepper over each half.
  6. Roast 25-30 minutes, until flesh is fork-tender. (Depending on the size of squash, you may need to adjust your cooking time)
