How to Roast Pumpkin Seeds

It’s that time of year!  Desserts, pies, jumping in piles of leaves, recipes and of course, pumpkin carving!  What about the insides of the pumpkins?  What do you do with yours?  Do you just toss them?  When I was in youth group as a young girl, I remember carving pumpkins, saving the seeds and the youth leaders taught us how to roast pumpkin seeds in the oven!

Aside from the other traditions, this has become a favorite part of fall and pumpkin carving for me!  Never thought about roasting the seeds from your pumpkins or maybe you didn’t know how? Don’t fret!  Just follow my simple instructions, let cool and ENJOY!!

Alright, so you’ve carved your pumpkins, gutted them 😉  and now you’re ready to get down to business!

1. Before the seeds, pulp and strings get too dried out, rinse the seeds under cold water.  Pick out the pulp & strings.  You don’t need that part.

2. After coating the pumpkin seeds with (your choice of) olive oil, non-stick cooking spray or melted butter, spead them out in a single layer on a baking sheet.  Tip: I line the baking sheet with foil to reduce the mess or possibly eliminate it.

3. Shake your desired amount of salt all over them and place in preheated 325 degree oven until toasted (approximately 25 minutes)

4. Let cool and enjoy!


*You could flavor them with other seasonings such as cinnamon and sugar or garlic powder.  The possibilities are endless!! 🙂

*Store any leftovers in an air-tight container to preserve freshness.


  1. I would always take the seeds when we carved pumpkins for halloween. But with my kids grown … how I miss having fresh roasted pumpkin seeds. I will have to do some this year just because… and use a sweet pumpkin and save the pumpkin for pies 🙂

    • Hi Valerie,
      It could be that they are too wet prior to going into the oven. Let them dry out just a bit on a paper towel. I hope that helps. I have had it happen before too.

    Getting the seeds out of the mush us the hard part but after that! I have done this with my kids but, according to your instructions have not toasted them long enough – I’ll do it your way next year.

    • Sometimes it is hard to find the correct time or temp. You may need to tweak it to your liking – and that’s okay! 🙂 I had to play around with it before I got it right. Enjoy!
