Old Fashioned Pancakes

 

Whether you’re a stay at home mom, work at home mom or you find yourself running out the door with barely enough time to drop the kids off where they need to be and then get yourself to the office or otherwise each morning, it can be hard to find time for a quick, easy and filling breakfast.  I work from home and have 2 toddlers.  Each day is wonderful and chaotic all at once.  There are times when it is very hard to stop and realize, “Hey Jenn – take a breath, sit down with your kids.”

So the other day when they asked me if we could make pancakes, I was RIGHT there! 🙂  It is a classic and easy recipe that even the kiddos can help with and most everyone enjoys.  Honestly, you can eat pancakes for the obvious breakfast, lunch (hey, why not?!) and dinner too!  Breakfast for dinner is a favorite in our house!

Okay, on to the ingredients you will need ~

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons butter, melted
  • 1 egg
  • 1 1/4 cups milk
  • cooking spray (such as Pam)

Directions ~

  1. Mix flour, baking powder, salt & sugar together. 
  2. Combine the melted butter, egg and milk with the dry ingredients.
  3. Once that is mixed, let the batter sit for about 5 minutes.
  4. Over medium-high heat, preheat your pan. Spray it with cooking spray.
  5. Pour about a 1/4 cup of batter (enough for 1 pancake) into the pan.
  6. Cook for 2-3 minutes.  Until you see bubbles on the sides and center of each pancake.
  7. Flip & cook until golden, about 1-2 minutes.

And if you’re like me, keep a close eye on the pancakes! 😉  It seems they cook so fast and I prefer mine a nice, light golden.
Plus, remember the 2nd side of any food always cooks faster.
