It’s that time again – back to school or most likely soon for many of us!  What would be a great, homemade breakfast that the whole family is sure to love and get everyone off to a good start? So I thought to myself, what is one of your favorite things to eat in the morning?  I love cereal, but it’s not like you can take a bowl of it in the car or on the school bus.  That’s it!  I knew I had the perfect idea!  I would make a cereal bar recipe to fill up everyone’s bellies in the morning.

I figured I’d head to my local Price Chopper supermarket to check out all of the items in the Back to School solutions center to pick up all of the ingredients for my recipe, as well as getting some great savings! I strolled down the aisles to find all of the items and ingredients for this easy dish.  There’s so many fantastic food items to make back to school easier, whether it’s breakfast, lunch or dinner time.

I love that you can pair this cereal bar with a single serve Yoplait Greek yogurt, a Capri Sun juice pouch on the go, or my favorite – a glass of milk.

Alright, so I’ve got the powdered sugar, honey, brown sugar, powdered milk, mixed nuts and parchment paper in my cart.  Time to pick up a box of Honey Nut Cheerios!

I threw my box of Honey Nut Cheerios in the cart and headed to check out.  I couldn’t wait to get home to make this fun and delicious cereal bar recipe!  Once I got home and got things unloaded, I put the butter and powdered sugar in my mixer.  Don’t worry, the complete recipe’s at the bottom for you!

Next, I slowly added the powdered milk, followed by the vanilla.  I mixed all of that together, adding tablespoons of hot water, one at a time until I felt it was thinned out enough.  I planned on using this as the icing for the cereal bars at the end.  It was a nice finisher to this easy treat.

I crushed up some mixed nuts by putting them in a resealable plastic food storage bag and firmly crushing them with my rolling pin.  I dumped them into the large bowl that I had poured the pre-measured Honey Nut Cheerios into.  Then I poured the deliciously sticky concoction of honey, butter and brown sugar all over the nutty Cheerio mixture.

I was getting so hungry just looking at this and stirring it together, imagining how good it was going to taste, as I spread it out in my parchment paper lined pan.

Once I had it all spread out as evenly as possible, I spread the icing I made earlier over it.

Once I cut into the large pan and tasted it, I couldn’t wait to give one to my husband.  He loved it and asked for another one.  I was really pleased as this was my first time making this type of recipe.  What cereal would you choose to make this cereal bar recipe with?

Cereal Bar Icing Recipe
Recipe type: Breakfast
Cuisine: American
This is the recipe for both, the icing and bars.
  • ¼ cup butter, softened
  • ½ cup powdered sugar
  • 1 cup non-fat powdered milk
  • ½ teaspoon vanilla extract
  • 1-2 tablespoons hot water, as needed to thin
  • ------------------------------------------------------------
  • 4 cups Honey Nut Cheerios
  • 1½ cups mixed nuts
  • ⅓ cup packed brown sugar
  • ⅓ cup honey
  • 1 tablespoon butter
  1. Cream butter and sugar with mixer.
  2. Add dry milk a little at a time.
  3. Add vanilla.
  4. Mix on high until smooth, adding water as needed a tablespoon at a time.
  5. Spread between cereal bars or use as icing, as I did.
  6. ------------------------------------------------------------
  7. Line bottom and sides of 8-inch square pan with parchment paper. If you don't have parchment paper, you can line it with foil and spray that with cooking spray to prevent sticking.
  8. In large bowl, mix cereal and mixed nuts; set aside.
  9. In large microwavable bowl, microwave brown sugar, honey and butter on high 2 minutes, stirring about half way between.
  10. Pour over cereal mixture, stir until evenly coated.
  11. Using the back of a spoon, press mixture into pan.
  12. Spread icing over cereal in pan.
  13. Refrigerate about an hour to firm them up.
  14. Afterwards, cut them into 4x4 rows.
  15. Store covered at room temperature up to 1 week.
