Summer activities are in full swing and for me, that means cookouts, barbecues, family get togethers and tons more fun!  Even those relaxing nights where you just want to take it easy and kick back with a cold one and some snacks are always welcome!

I tend to make the traditional salads when it comes to summer foods.  But lately, I’ve been hungry for something different.  I love to snack so this idea just came naturally.  I thought to myself, “Why not make a beer cheese dip recipe?!”

Beer Cheese Dip Recipe

I headed to my local Price Chopper to pick up some grocery items along with the items I’d need to make my latest snack idea.

Lucky for me, the main items I’d need were in one aisle.  It was literally one stop shopping!  I picked up the shredded cheese and cream cheese first.  But once I reached the next section with adult beverages, I had an entire assortment at my fingertips.

How would I choose?!  I had my heart set on the Miller Coors family because there’s such an array of flavors! I loved that I could pick single bottles or a case.  With flavors like Leinenkugal’s Summer Shandy and Grapefruit Shandy; Blue Moon Belgium White & Blue Moon White IPA; MillerLite or Redd’s Apple Ale & Redd’s Green Apple Ale, it was not an easy decision.  However, I settled on Leinenkugal’s Summer Shandy for a nice citrus blend, Blue Moon Belgium White for a more classic taste and my personal favorite, Redd’s Apple Ale.  It’s so delicious and presents itself as more than just a beer.  It has a nice apple background to it.

Alright, so I’ve got my cheeses and assorted beers.  I need some snacks to dip in this salivating concoction that I couldn’t wait to make!  It was only difficult because I wanted so many items.  I perused each aisle with care, only to end up with Tyson chicken fingers, lots of fresh produce and some pretzel rods.  I also stopped by the bakery section to get a bread bowl.  Less dishes and an edible addition — win, win!

Let me give you this recipe so you can get started on it.

Recipe type: Appetizer
This will make a single batch, but you can double up to make more.
  • 2 cups shredded cheddar cheese
  • 2 bricks cream cheese - 8 oz each
  • ¾ cup beer
  • choice of snacks - raw veggies, pretzel rods, bread bowl, chicken, etc.
  • chopped green onion and shredded cheese for garnish
  • Ranch powder mix or onion powder -- or your favorite blend of spices for optional seasoning.
  1. Melt cheeses and beer together.
  2. You can add more beer to reach desired consistency if you would like.
  3. Keep stirring until all melted together.
  4. Pour in dish or bread bowl.
  5. Garnish and serve.
  6. Enjoy!
