Apple Cinnamon Cake

If you’re like me, you bought way too many apples at the pumpkin farm and need to use them up! Personally, I can only eat so many apples before I get tired of them.  I wanted to make them into a new recipe that my entire family would be sure to love!  My friend told me about this apple cinnamon cake recipe and I could not wait to make it!

Ingredients:

  • 1/3 cup brown sugar {not packed}
  • 1 teaspoon ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup butter, softened {1/2 cup = 1 stick}
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons vanilla extract
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1 apple, peeled & chopped {tip: I used 2 apples because they were a tad on the smaller size}

Instructions: {Looks like a lot of steps, but it is just broke down more simply for you.}

  1. Preheat your oven to 350 degrees.
  2. Grease and flour a 13×9 pan.
  3. Mix brown sugar & cinnamon together in a bowl and set aside for now.
  4. Beat white sugar & butter together using an electric mixer.  You will want to do this until it is smooth and creamy.
  5. Incorporate eggs, one at a time.
  6. Add vanilla extract.
  7. Combine flour, baking powder and the creamed butter mixture.
  8. Mix milk into this batter until smooth.
  9. Pour your batter into the greased & floured 13×9 pan.
  10. Evenly place {gently pour} over the entire top of the mixture now in that pan.
  11. Sprinkle the brown sugar & cinnamon over the apples.
  12. Bake for 30-40 minutes in your preheated 350 degree oven.
    {Mine took about 35 minutes – I inserted a toothpick in the middle and it came out clean}

 

Let cool and enjoy!  It would be wonderful paired with vanilla ice cream or even cool whip for a lighter dessert.  I really love this dessert because it is light – not too sweet at all!
