What’s one of the best comfort foods or sides that you can think of?  Mashed potatoes, right?!  Okay, well this is my spin on it.  Sure, I like mashed potatoes but sometimes I like a little texture and that’s when I smash them.  😉  That just means I leave the skins on and don’t make them realllly smooth & creamy.  I leave them a tad lumpy.  They are just as delicious though.

Ingredients needed:

  • 4 pounds of potatoes (about 8), halved
  • 2 cups sour cream
  • 1/2 cup milk
  • 1/2 stick unsalted butter
  • salt, pepper, garlic powder & onion powder to taste (really just a preference thing)

Directions:

  1. Clean your potatoes and put them in a large pot.
  2. Add enough cold water to cover them and bring to a boil.
  3. Reduce heat and simmer until fork tender, 15 to 20 minutes.
  4. Drain the potatoes and return them to the pot – this will get rid of some of the moisture, as you don’t want too much water left in there.
  5. Add the sour cream, milk, butter, salt, pepper, garlic powder and onion powder to the potatoes and “smash” to the desired consistency, which for this dish is meant to be a little lumpy. (Not creamy or totally smooth)

  1. Nice! I like mashed potatoes with the skin on too 🙂 I’ll have to try your recipe out though…love that you use sour cream. I’ve used cream cheese in my mashed potatoes but I’ll def have to try the sour cream out and see what we think.
