Enjoy a Quick Mexican Lasagna on Game Day! #ProgressoGameDay #ProgressoChili

In my house, there are two things we love: food and football.  Okay, so my husband loves the football more than I do, but I still think it’s important to have delicious food choices on game day!  One of the easiest additions to my grocery cart, kitchen and ultimately game day is Progresso’s Chili.

I have barely been to the grocery store for one of those big trips lately.  Partly due to the fact that my kids have been so sick with ENT issues (Ears, Nose, Throat).  One thing I did have on hand for this past Sunday was Progresso Chili.  Have you tried the Southwest Style White Chicken Chili with Beans?  Oh my.  It is so delicious! The flavorful, tender chicken, perfect ratio of white beans and amazing green chiles just go so well together.  Okay, so fast forward to wanting to mix things up and not just wanting to have a bowl of chili.  I looked in my fridge and came out with egg roll wrappers and sharp cheddar cheese.  What could I do with that?

I made a make shift (sort of) Mexican lasagna.  I layered the egg roll wrappers, chili and cheese until it was stacked to my desired thickness – it was about 3 of each item.  I cooked it in the oven at 350 degrees for about 35 minutes.  Stay close only because you have to keep in mind the egg roll wrappers are obviously not very thick or doughy, if that makes sense.

Other than that, you are good to go.  So, it’s a quick, hobo style recipe.  That does not mean it lacks for flavor by any means.  My husband loved it and actually went back for seconds.  I was surprised only because he is not always into things with green chiles.
