Pasta Salad Recipe

 Summertime is quickly approaching and what says summer better than picnic type food?!  Pasta Salad is a great dish to bring to a cookout (especially because it is mayonnaise free!) or even just make for a quick lunch!  I feel there is no right or wrong way to make this particular dish.  I also don’t think I’ve ever made it the same way twice! I decided to keep it simple this time so that everyone eating it would like it.

I rarely measure or use proper size etiquette when cooking.  I don’t do much baking, but I know you have to measure accurately for that.  Anyway, this time around I decided to use carrots, cucumber, sharp cheese, ham AND pepperoni per my husband’s request.  Then of course I used the rotini primavera tri-colored noodles and Robusto Italian dressing (any brand will do).

All I did was dice up 1 large cucumber, shred a couple of carrots, cube the ham and cheese and cut up the pepperoni.  I did all of that while the noodles were boiling.  Once the noodles were done, I put them into a colander and ran cold water over them to slow/stop the cooking process.  I had pulled them a little early so they’d remain al dente. (with a bite to them).

Once the pasta was cool enough to combine with the ingredients, I did just that.  Then I poured the Italian dressing over the entire mixture and stirred thoroughly.  All I did after that was stick the large bowl in the fridge and impatiently wait to devour a delicious bowl!!
